When Hello Nori, a fast-growing sushi hand roll concept, realized they were expanding faster than their systems could support, they turned to Andrej Nemcek, VP of Product at moola.com, to help bring order to the chaos. With a background in software, Andrej was tasked with finding an inventory and cost management solution that could keep pace with their accelerating expansion.

“Hello Nori opened their first location three years ago,” says Andrej. “They’re about to open their seventh. So it’s grown pretty fast.”

The Search: Why Hello Nori Chose MarketMan

Andrej evaluated five inventory platforms and shortlisted three. After an in-depth comparison, MarketMan emerged as the standout choice.

“MarketMan’s UX, usability, and powerful data model stood out. From a technical standpoint, I really liked how everything was built up from the items, the sub recipes, to the preparations. It all made a lot of sense to me. HQ views were great, too. We wouldn’t run into too many roadblocks, unlike other software we looked at,” he states.

He also appreciated MarketMan’s centralized control and ability to handle complex use cases: “It felt like MarketMan could actually handle where we’re going.”

MarketMan Implementation and Early Impact at Hello Nori

At the time of the interview, Hello Nori had just launched MarketMan at one location, with plans to roll out two more in the following months. But with one location using the system, they were already seeing the benefits. 

​​“Ordering tracking is already much better; it used to be paper-based,” he explains. 

They also plan on setting up AI Ordering to be even more efficient. “AI Ordering will help us order the right amounts and minimize waste, which I think is something every business struggles with. It’s a feature we’re looking forward to using,” he says.

The Hello Nori commissary, which also serves as its central headquarters distribution point, manages certain bulk-purchased SKUs for all locations. Previously, this process was manual. Now, they have visibility into orders and can track preparations against them.

“We’re still at the beginning, but just having visibility into orders and being able to track preparations has been really good. The feedback from the team has been great.”

Accounting Relief

One of the biggest pain points MarketMan solved for Hello Nori was invoice and expense management. Each location has its own P&L statement and QuickBooks account, and MarketMan allows them to support multiple QuickBooks accounts while still maintaining central oversight.

Invoice line-item coding had also been a major challenge, compounded by the issue of duplicate invoices. MarketMan’s system prevents duplicates, eliminating a significant source of frustration.

“Just the invoice line item coding used to be a nightmare,” Andrej says. “We were looking at other software, but MarketMan handles 80–90% of the load. That alone saved us from needing another platform.”

The team is also using MarketMan’s AI Invoice Scanning feature. “We just turned it on,” Andrej explains. “The combination of AI invoice scanning and line-item extraction is going to save us a significant amount of time. About hundreds of hours each month.”

Built for the Way They Work

He liked the ability to set different price levels for different customers, which is important because of their specific commissary setup. 

“The commissary serves our to-go orders, catering, and locations, and we plan to expand to multiple warehouse locations in the future. Flexible pricing helps us handle these complex cases.”

Andrej is confident the reporting tools will also play a big role: “Seafood prices fluctuate a lot. Being able to track actual vs. theoretical usage to monitor efficiency across locations, set thresholds for cost alerts, and dive into COGS-related reports will be huge.”

Looking Ahead with MarketMan

With team buy-in and regular internal trainings, Hello Nori is well-positioned to expand its use of MarketMan. Core participants in these trainings include the head chef, operations manager, warehouse manager, beverage manager, some corporate chefs, and one accounting representative.

“I think the head chef originally had some trepidation because change is always difficult,” says Andrej. “Over time, he’s become enthusiastic about MarketMan and understands its potential. He’s part of our internal trainings every time new locations are coming up. We just had one yesterday, and he’s really behind it.”

“MarketMan is doing 95% of what we need,” Andrej adds. “We ran into weird use cases, and it just handled them. No workarounds, just clean solutions.”
